FLAMING HOT

9 December 2008

The Fire at Berrywood

Liquorish
123 Lordship Lane, SE22 8HU

£6.50  This is a great cocktail to make at home as you need no specialist bar equipment. At liquorish the cocktails reflect the seasons, thus this is served warm.

 Ingredients:
50ml Woods Rum
15ml Grand Marnier
10ml Good maple syrup
1 blackberry
2 raspberry
1 chopped strawberry
Orange peel
Ground Cinnamon

How to make:
Rest a brandy glass on a glass of hot water. Put all of the ingredients into the brandy glass save for the cinnamon and orange peel. Rotate the brandy glass to coat the sides with the alcohol.

Microwave the orange peel for 10 seconds and put a flame to it whilst squeezing it, aimed at the inside of the brandy glass. (BE CAREFUL, IT FLARES UP A LITTLE).

As the cocktail cooks the ingredients together, sprinkle the cinnamon over the top. Extinguish the flame by covering the open side of the glass with a damp tea towel. Wait for the glass to cool before enjoying the autumnal tastes.

Liquorish recommend this with a steak. It has a half-price steak club on Wednesdays.
