Liquorish Kitchen Garden

£6 This is a refreshing drink which is similar to Pimms No 1 but without the bitter twist. The cocktail brings out the aromatic flavours of the gin with mint and cucumber and is a perfect cool drink for summertime.
Ingredients:
35ml Blackwood's Organic Gin, 15ml fresh pineapple juice, 15ml St Germain Elderflower liqueur, fresh mint and cucumber.
How to make:
Tear off five to ten mint leaves and roll them in your hands to break. Grind the leaves in a cocktail glass for less than a minute. Chop about an inch-and-a-half of cucumber into medium sized pieces and add to the mint. Crush firmly to release the cucumber juice. Add the gin, pineapple juice and elderflower liqueur to the glass. Add some cubed ice to fill half the glass. Attach the shaker and shake the mixture until the metal is cold. Put crushed ice into a short glass and strain the mixture into it. Serve with a slice of cucumber and a sprig of mint.
